Beef

Mushrooms

Onion

Worcestershire sauce

My homemade keto Worcestershire sauce adds tons of flavors to this recipe without any added sugars or starches.

Seasoning

Xanthan gum

Ready to make this delicious recipe? Here's how to make tender steak bites in just 3 steps:

Step 1: Brown the meat

First up, heat a bit of olive oil in your frying pan over medium-high heat. While heating, season bite-sized pieces of beef with a bit of salt and pepper.

Add your beef to the hot oil and brown it for a few minutes on each side.

Step 2: Load the slow cooker

Next, add your sliced onions and portobello mushrooms into the slow cooker, topping with the cooked beef, beef broth, Worcestershire sauce, garlic powder, thyme, oregano, basil, and parsley.

Step 3: Stew meat

With that, your work is practically done! Place the lid on your crockpot and turn the power to low.

Cook your steak tips for several hours, adding in a bit of xanthan gum if you prefer a thicker sauce. The sauce is naturally thin, perfect for soaking into a delicious slice of bread.

The name of this meat cut can be a little misleading. The sirloin tip does not actually come from the sirloin cut, nor is it the tips of steaks. So keep this in mind when shopping for low-carb beef dishes calling for it.

Sirloin tips actually come from the round portion of the hindquarter, which runs from the ankle to the rump.

Beef round is generally less tender than other cuts of meat because the leg muscles have been toughened by exercise.

It's a lean, boneless cut that is great for stew meat and kabobs. The best way to prepare sirloin steak tips is to use moist-heat methods, which makes this crock pot steak tips recipe perfect.

How can you make sirloin steak tips more tender?

The best way to create tender, juicy pieces of Sirloin steak tips is to cook them in a slow cooker since the low-and-slow method works very well with this cut of meat.

But if you’re still finding the meat is tougher than you would prefer, here are some ways to tenderize your meat before cooking:

- Hit room temperature: Before cooking the meat, take it out of the refrigerator and let it come to room temperature.
- Use a meat mallet: Use the flat side of a meat mallet to gently tenderize the meat before cooking.
- Add salt: Before cubing, lay your steaks out in a single layer and lightly cover each side with about 1 teaspoon of kosher salt or sea salt (avoid using table salt). Using the back of a spoon (or your fingers), gently nudge the salt into the surface of the meat.
- Slice against the grain: Make sure that when you are cutting your meat into cubes, you slice against the natural grain of the meat. In other words, cut across the long muscle fibers that are running throughout the meat. This will make the meat more tender and easier to chew.

How do you prepare sirloin steak tips for the slow cooker?

One of the most important steps in preparing sirloin steak tips (or any cut of beef) for the slow cooker is to brown the meat.

Although you can add raw meat directly to the slow cooker, browning (or searing), the meat adds a lot more of the deep, rich flavor that you expect from a beef stew.

To properly brown your sirloin tip steak cubes, place the meat into a hot pan and cook them for a couple of minutes until the bottom develops a nice, dark crust.

Turn the cube over and sear, repeating for each side of the meat.

How do I store leftover Sirloin steak tips?

After cooking, do not leave the meat at room temperature for more than two hours. Also, be sure to store any leftover steak tips in the refrigerator as soon as possible.

Properly stored, your leftovers will be good for two to three days.

If you won’t be eating the leftover steak tips within three days, then it is best to freeze them. This makes them a great freezer-friendly low-carb meal as well.

Divide the leftovers into single-serve or family-sized servings and store them in airtight containers or heavy-duty freezer bags.

If you are using freezer bags, be sure to press the bags flat so that they take up less space in your freezer.

Properly stored and frozen, the dish will keep well for 2-3 months.

  • 2 tablespoons olive oil
  • 2 pounds beef round cubed
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 8 ounces baby portobello mushrooms sliced
  • 1 small onion sliced
  • 3 cups beef bone broth
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder

Instructions

  • Heat oil in large skillet over medium-high heat. Season beef with salt and pepper. Brown meat in hot oil, about 3-5 minutes per side, then set aside.

  • Place sliced mushrooms and onions into slow cooker. Top with browned beef, broth, Worcestershire sauce, garlic powder, thyme, oregano, basil, and parsley.

  • Cover crock and cook on low 6 to 8 hours or until meat is fork tender. Sauce will be thin. If thicker sauce is desired add in small amounts of xanthan gum (about 1 teaspoon or so). Or, use low carb thickener of choice.

Notes

  • Although they are often called sirloin steak tips, they are actually cut from round steak. So if you can't find steak tips already cut, simply cube round steak.
